Shigeo Nonaka Master Shigeo Nonaka is the executive chef of Shoya Japanese Restaurant in Melbourne's Chinatown. Born in Fukuoka City located in the Southern part of Japan, Shigeo Nonaka migrated to Australia nearly 20 years ago after serving an illustrious apprenticeship with the highly rated 90 year old Ryotei Okamoto (a very luxurious traditional Japanese Restaurant) and several other prestigious restaurants after that.

His noble mission in Australia at that time was to provide a level of fine-dining Japanese cuisine in the traditional style – yet imposing his own personality and creativity in the process.

Towards the end of 2004, Master Shigeo accepted the challenge of creating from top to bottom a full fine dining concept in Melbourne's Chinatown. From the multi-layered interior design and ambience, menu creation, stock procurement to hiring of key staff – a task he tackled with his full force of energy and boundless enthusiasm. By 2006, Shoya earned a One Hat Award – a status which has been retained to this day.

Shoya is also regularly rated by The Age Good Food Guide in the rarefied group of truly great Japanese Restaurants.
